Salmon with Lemon-Caper Sauce

  • 1. Heat oil in non-stick skillet over medium heat. Season both sides of salmon filets with salt and freshly cracked black pepper. Add to pan, skin-side down, and cook until golden; about 5 minutes. Turn filets over, add lemon zest, lemon juice and capers. Cook 2 -3 minutes more for medium doneness. Remove salmon filets and set aside to rest, keeping warm.
  • 2. Add butter to skillet and swirl to finish sauce and thicken slightly. Spoon finished sauce and capers over salmon filets.
