Big flavor comes in a small package with these individual souffle bites. Full of cheesy goodness with a lighter-than-air texture, these mini souffles can be enjoyed as is or incorporated with your favorite variety of souffle ingredients. Just be prepared to share if others notice them.

  • 1. Preheat oven to 375 degrees. Butter mini muffin pan and set aside.
  • 2. Saute onion in a large saucepan over medium heat until soft and lightly golden, stirring occasionally; about 3 minutes. Add garlic and saute 1 minute more. Stir in flour and cook for 2-3 minutes, stirring often.
  • 3. Slowly whisk in milk and simmer, whisking constantly, until thickened; about 2 minutes. Remove from heat and stir in cheese, salt, pepper, and reserved onion. Whisk in egg yolks, one at a time, until combined.
  • 4. In a large mixing bowl, beat egg whites with a pinch of salt until stiff peaks form. Sir 1/4 of egg whites into the cheese mixture. Gently fold in the remainder of the whites. Spoon into prepared muffin pan. Bake until puffed and golden brown; 15-20 minutes. Serve immediately.
