Flourless Oatmeal Raisin Cookies

Soft, chewy and packed with raisins, these flourless oatmeal cookies are good by themselves or, perhaps, the perfect dunking partner for a glass of cold milk.   • 1. Preheat oven to 375 degrees.
  • 2. In a medium bowl, whisk together the egg, syrup, applesauce and vanilla. While whisking, drizzle in coconut oil until incorporated.
  • 3. Add the oats, coconut, baking soda and salt. Stir until incorporated. Fold in the raisins and pecans.
  • 4. Scoop tablespoonfuls onto a baking sheet lined with a non-stick baking mat. Flatten into cookie rounds with your hands. Place the sheet in the oven and bake until the cookies are golden; about 15-18 minutes.
  • 5. Remove the cookies from the oven and let cool on a wire baking rack. Store in an airtight container once cooled. These cookies are sensitive to humidity. Placing a slice of bread in the container will help control the humidity and keep the cookies from getting overly soft and sticky.
