The case could be made that this is the king of salads — simple, timeless and an all-time favorite. For added freshness, the traditional croutons have been replaced with tomatoes. We promise, you won’t even miss them.

  • 1. Mash garlic with the side of a chef's knife until a paste forms.
  • 2. In a medium bowl, add the garlic, egg yolks, lemon juice, Dijon mustard and anchovy paste. Whisk until combined.
  • 3. While whisking, slowly add olive oil until the dressing thickens and emulsifies. Add grated parmesan and whisk to incorporate. Season with salt and pepper. Use immediately or refrigerate.
  • 4. In a large bowl, toss the romaine and tomatoes with your preferred amount of dressing until well combined. Serve topped with the shredded parmesan. Refrigerate any leftover dressing.
